Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 3 cloves garlic
  • 1 carrot, chopped
  • 1 stalks celery, chopped
  • 8 cups low salt vegetalbe stock
  • 2 16oz can black beans, rinsed and drained
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 tbsp balsamic vinegar
  • 1 bunch cilantro leaves, chopped

Quick Black Bean Soup Directions

  1. Heat oil in a large saucepan over medium-high heat. Add onion; cook 5 minutes, stirring occasionally.
  2. Add stock, beans, coriander and cayenne pepper. Simmer uncovered 10 minutes.
  3. Stir in vinegar. Transfer to blender or food processor; process to desired consistency.
  4. Reheat if necessary.
  5. Ladle into shallow bowls; garnish with cilantro.
