Dressing

  • 1 tbsp Olive Oil
  • 1 tbsp Balsamic vinegar
  • 1/2 tsp dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp soy sauce
  • salt and pepper (optional)

Salad

  • 3 cups packed mixed mesclun or spring greens
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts
  • 1/2 cup crumbled farmer cheese

Mixed Greens with Cranberries and Walnuts Directions

  1. Combine oil, vinegar, mustard, garlic and soy sauce; mix well. Season to taste with salt and pepper if desired.
  2. Toss dressing with greens, cranberries and walnuts.
  3. Arrange on serving plates.
  4. Top with cheese.
